Help with carb bars etc on Apollo pit

Hey yall, ive been here for a few years, was done with pitbikes for awhile, now im in the USA visiting/living and i got myself a new Apollo ADG 125cc Pit bike CRF70 Sized frame, its brand new 2014..and yrs back when i had my old Monster moto i tuned the carb up with the whole mixture/idle screw routine, and ive been trying to do that same thing with this apollo pit bike so itll run good and ill get the most of out of but hell now that ive checked the carb after a few rides, there is these weird screws (UNSCREWABLE LOOKING SCREWS LOL) in the carb and on the throttle housing ontop of the carb and i dont know how to take it off?? the screws i mean... ill try and attach pictures of this so if anyone knows how to fix this or come about it, please let me know.. but im thinking of just buying a new carb for it, i dont know where to measure for a new carb to fit this bike so could someone help me with this? i have a picture or 2 of the carb area/manifold with a measuring tape beside it, could someone tell me what size carb i need when buying new? and any info on size of throttle cables?


Also what size bars are good? i was thinking 5/6inch ride bars? without having to chance all the throttle cables and clutch cable sizes..

Pictures are attached of the carb screws, throttle screws on carb and some others incase anyone needs to see the bike to know how to answer me!

carb size i should buy? throttle type i should buy for new carb and for this bike?
 
look on something on ebay mikuni is good and you can adjust air fuel
