First of all does anyone know what oil goes in the auto gear box, secondly the standard tyres are 2.50 x 10, will 2.75 x 10 be too wide taking into account their is not much spacing between the rear tyre and the tailpipe?

10/40 or 20/40 engine oil should be fine.
Castrol 4T make a good oil

with the bigger back tyre, do you have 12 mm clearance on each side of it now ?
if you do, the bigger 2.75 tyre will only be about 6mm wider each side, and allow a bit for clearance.
if so the 2.75 should be ok
someone else here may be able to confirm it for sure though.
