I was thinking today what if I buy one of them cheap little 49cc mini dirtbikes and put an old 80cc water cooled 2 stroke engine in it... would it work?

Yes with some modifications but the frame might not be able to hold it up because of the weight of the engine but depends on what frame it is I'm only going by what frames i have seen for 49cc engines....

But really there not expensive so it wouldn't hurt to try and it will be a bit of fun i suppose

No it wouldn't work. Those frames bend like cheese sticks.
